Game days are big days around my house. There’s nothing quite like relaxing at home, watching a game with the ones you love. Everyone in my family tends to root for different teams and this can stir up some big team rivalry along with a big appetite for some delicious homemade snacks from my kitchen.

I can’t wait to share my recipe for Quinoa Black Bean Poppers for your next Game Day snack. These poppers are so easy and versatile, and the Old El Paso mini taco boats make these the perfect size for snacking. Along with being power packed with extra nutrients from the quinoa and black beans, they’re an easy way to please everyone in your home.
Quinoa Black Bean Poppers
1 cup quinoa, uncooked
1 can black beans
1 can corn
1 Tablespoon olive oil
1 cup shredded cheese, any variety
1 medium onion, sliced thin
1 red, yellow pepper or a combination of your favorite, sliced thin
Salsa, taco sauce, BBQ sauce, ranch, sour cream, lettuce, hot peppers (optional for toppings)
Preheat oven to 350 degrees.
Cook the quinoa according to manufacturer’s directions. Set aside.
Cook sliced onions and red/yellow pepper with the oil in a large skillet on medium/high heat until vegetables are crisp tender.
Place taco boats onto prepared baking sheet and spoon about a tablespoon of the cooked quinoa in the bottom of each boat. Next, spoon about a tablespoon of black beans and a tablespoon of corn into each of the boats.
Next, add some of the cooked onions and red/yellow peppers and then top with a small amount of the shredded cheese. You can also omit the cheese for a dairy free option.
Bake in oven for about 15 minutes or just until cheese is melted.
Serve immediately with your choice of toppings, such as salsa, sour cream, ranch dressing, BBQ sauce or hot peppers for an extra spicy kick!
