There are so many advantages to living in Florida! Besides the beaches and theme parks, one of my favorites is the beautiful, early Spring weather and the availability of fresh seasonal produce. You just can’t beat these glorious April days and the fact that in Florida there’s always some sort of locally grown, fresh produce in season, particularly blueberries! Yes, you read it right….here in the Sunshine State blueberries are in season and ready to be gobbled up!
Blueberries are so good for you and can be used in a variety of ways! I wanted to share a delicous recipe for Florida Blueberry Key Lime Pie that would be a perfect addition to your Easter dinner. Key Lime Pie is a Florida favorite but adding a Fresh From Florida blueberry topping just adds an extra special touch!
Florida Blueberry Key Lime Pie
What You’ll Need:
Graham Cracker Crust:
1 1/2 cup finely crushed graham cracker crumbs
1/3 cup butter, melted
3 tablespoons Florida sugar
Key Lime Pie Filling:
14 ounce can sweetened condensed milk
4 large egg yolks
1/2 cup fresh squeezed Florida key lime juice
3 teaspoons fresh key lime zest
Florida Blueberry Topping Ingredients:
2 cups Florida blueberries
1/2 cup apricot jam
1/4 cup water
First let’s start with the pie crust.
1. Preheat your oven to 350 degrees. In a medium bowl, combine graham cracker crumbs, butter and sugar. Stir to combine. Press the graham mixture into the bottom and sides of a 9” pie pan. Bake for 10 minutes.
Let cool completely. Set aside.
2. Now let’s prepare the tasty key lime pie filling! Preheat the oven to 325 degrees.
In a medium sized mixing bowl, combine condensed milk, egg yolks, key lime juice and key lime zest.
Use a whisk to make sure all ingredients are combined. The combined ingredients will naturally thicken slightly.
Pour key lime pie filling mixture into the cooled graham cracker crust.
Bake pie for 10 to 15 minutes or until the pie looks almost set.
Remove pie from oven and let cool to room temperature. Top with whipped cream and slices of fresh lime.
Cover pie and place in the refrigerator to allow pie to chill while you prepare the blueberry topping.
3. Let’s make the yummy Florida blueberry topping! Heat the apricot jam and water in a small saucepan over medium heat until completely melted.
Arrange blueberries in a single layer over the key lime pie.
Using a pastry brush, brush a layer of melted jam over the blueberries.
Let pie cool completely and serve!
