I love pumpkin anything….pumpkin pie, pumpkin cookies…you name it. I’ll even eat it by itself! The fall season is upon us and it’s that time again….pumpkin time! 🙂 This recipe is just so oh my goodness yummy….just take my word for it and bake up a batch today!
Servings: about 12 decently sized bars from 9 x 13 pan, more if you cut them smaller but really! Who wants a teeny tiny pumpkin bar?? 😉
You will need:
1 29 ounce can Libby’s Pumpkin Pie Mix
3/4 cup sugar
3/4 cup canola oil
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 pkg cream cheese, softened
1 cup butter or margarine, softened
2 teaspoons vanilla
4 cups powdered sugar
1. Preheat oven to 350 degrees F.
2. In a medium bowl, mix the eggs, sugar, oil, and pumpkin with an electric mixer until light and fluffy. Sift together the flour, baking powder, baking soda, and salt. Stir into the pumpkin mixture until thoroughly combined.
3. Spread the batter evenly into a prepared 9 x 13 pan. Bake for about 30 minutes in preheated oven, or until toothpick inserted in center comes out clean. Cool before frosting.
4. To make the frosting, cream together the cream cheese and butter. Stir in vanilla. Add powdered sugar a little at a time, beating until mixture is smooth. Spread evenly on top of the cooled bars.
Cut into squares and serve!
