Yum! A delicious, sweet and cool creamy chicken salad sandwich goes well on these hot, late summer days. This chicken salad is not your ordinary, boring chicken salad…this is so much better because of its not so secret ingredient….cranberry sauce! Give it a try today.
Servings: about 8
You will need:
2.5 lbs. skinless chicken breasts or skinless chicken tenderloins, cooked and cubed
1 can whole cranberry sauce, can also use jellied variety if you do not care for whole cranberries
3/4 cup mayo
1/2 cup diced onion
bread or rolls of your choice
lettuce if desired
1. Place cooked, cubed chicken into food processor. Pulse until very finely shredded. Remove and add to medium mixing bowl.
2. Stir in cranberry sauce, mayo and diced onion, and mix thoroughly.
3. Cover and refrigerate for about an hour until chilled. Serve on your choice of bread or rolls with lettuce if desired.
This chicken salad is delicious as soon as it is prepared, but really tastes great the following day, when the flavors have had time to meld together!
Serve these with chips or fresh fruit.
