This recipe makes one of the best tasting chicken sandwiches ever! These go great for picnics or just an easy weekend meal.
You will need:
4 boneless, skinless chicken breasts
3 tablespoons butter or margarine
2 tablespoons minced garlic
5 teaspoons dried basil, divided
8 ounces cream cheese, softened
8 slices french bread
lettuce, tomato, sweet onion if desired
1. In a medium bowl, mix together the cream cheese, and 3 teaspoons of basil. Set aside.
2. Melt butter over medium heat in skillet. Add chicken breasts and season with the remaining basil and the minced garlic. Cook until juices run clear, about 8 minutes per side. Set aside to cool.
3. Spread butter onto one side of each slice of french bread and toast the bread in a skillet until golden brown. Remove and spread cream cheese mixture onto the slices of bread.
4. Assemble sandwiches with the chicken, lettuce, tomato and sweet onion.
