Mmmm there’s just something so right about bacon…and swiss! How about adding some crisp, delicious Granny Smith apple slices to the mix? It might sound a little odd, but just trust me on this one….it is so good. The combination of tart apples, creamy melty cheese, and crisp bacon literally go hand in hand together.
This sandwich makes a great lunch or a nice snack.

Servings: makes one sandwich
You will need:
1/2 Granny Smith apple, peeled and sliced thin
1 regular slice Swiss cheese, about 1 ounce (you may also make this with cheddar or other cheeses)
1 tablespoon butter or margarine
3 slices bacon
2 slices whole wheat bread
1. Cook bacon over medium high heat until crispy. Allow to drain over paper towels.
2. Butter both slices of wheat bread on one side. Place one slice, buttered side down in clean skillet. Arrange apple slices on top of the bread, then add the slice of cheese. Add the bacon on top of the cheese. Finally, top off the sandwich with the remaining buttered slice of wheat bread.
3. Cook over medium heat until bottom slice of bread is lightly browned. Flip the sandwich over carefully to avoid having the toppings fall out. Cover the skillet to help the cheese melt faster, and cook an additional 2 minutes or until bread is lightly browned on the bottom.
4. Remove from heat. Now here’s the hard part, but it’s worth it! Allow sandwich to sit for about 5 minutes or so, so that the flavors meld together. Doing so also helps the apples to soften just slightly.
Serve this with your favorite chips or pretzels!
