Happy Friday everyone! Summer is basically upon us here in Florida and we have had some extremely hot and humid days here lately. Along with heading to the beach to cool down, we also love to make some chilly treats right at home! One of my most favorite comfort foods is icecream, especially homemade icecream. It tastes so much better than store bought is better for you too! For Christmas I received a Cuisinart icecream maker and I absolutely love it. It makes perfect icecream and fast! This recipe is for homemade strawberry icecream. You can also modify this recipe to make it more low fat, although it may not turn out to be quite as creamy as usual.
Servings: about 8
You will need:
1 quart fresh strawberries, hulled and sliced
3/4 cup half and half
2/3 cup white sugar
1 1/2 cups 2% milk
pinch of salt
1 1/2 teaspoons vanilla
1. Place the sliced strawberries into a food processor and pulse until the strawberries are very finely chopped. Set aside.
2. In a medium bowl, combine half and half, milk, vanilla, sugar and salt thoroughly. Stir in the finely chopped strawberries. Cover and refrigerate for about 2 hours.
3. Pour milk and strawberry mixture into your icecream maker and turn on maker for about 20 minutes. The icecream will have a soft serve consistency. Scoop into dishes and serve immediately or pour into an airtight container and freeze until icecream becomes more firm, about 2 hours.
Add your favorite toppings such as whipped cream, cherries, or more strawberries!
