If you love a savory reuben sandwich stuffed with plenty of corned beef and sauerkraut, and if you love all things pizza…..you will want to give this recipe a try! It’s the perfect combination of both!
This recipe makes one large pizza.
You will need:
1 large whole wheat pizza crust, or my No Rise Pizza Crust Recipe
8 ounces sliced corned beef
2 cups Swiss cheese shredded
1 15 ounce can sauerkraut, very well drained
2 tablespoons minced onion
3/4 cup Thousand Island salad dressing
1. Preheat oven to 375 degrees F. Lightly spray a large pizza pan and add ready made pizza crust or prepare my recipe for No Rise Pizza Crust
2. Spread the salad dressing over the pizza crust, then top with the sliced corned beef. Next sprinkle with the minced onion, and add the sauerkraut. Finally top the pizza with the shredded cheese.
3. Bake for about 20 minutes until cheese is melted. Serve with dill pickles and a side salad!
