This recipe will produce a chewy and moist oatmeal raisin cookie.
1/2 cup butter or margarine, softened
1/2 cup white sugar
1/2 cup packed brown sugar
1/2 teaspoon vanilla
3/4 cup flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 and 1/2 cups oats
1 cup raisins
Heat oven to 375 degrees F.
Cream both the white and brown sugars into butter. Add egg and vanilla and combine until smooth. Add salt, baking soda and cinnamon. Stir in flour, oats and raisins.
Drop by rounded tablespoon onto greased cookie sheet and bake for about 8 minutes, until edges begin to brown.
Allow to cool for one minute, and remove to cooling rack.
